Orecchiette are a special type of pasta in the shape of small shells that go perfectly with rich chunky condiments. Well, I know this could sound creepy, but to be precise orecchiette in Italian means cute, little ears. Who’s hungry now? Not the best way to start a new post, I guess. But my conscience was screaming at me not to let you guys get mixed up between orecchiette and conchigliette (Italian for small shells that also indicates a different shape of pasta). So man up and keep reading, you’ll love this pasta.
Arugula and cherry tomatoes are a sure win, un’abbinata vincente with pasta; la novità, what’s new, in this recipe is the potato that blends all the ingredients together. I found this recipe on a book from Benedetta Parodi, a super famous Italian cook and TV celebrity whose biggest accomplishment is showing people how simple cooking can be. So, kudos to her for creating a new army of cooking enthusiasts after an era of pompous chefs, and to be able to do that on 4’’ heels! Grandissima! So what, maybe she’s a little showy too? Well, I like her anyway!
Ingredients for 4-5 persone:
1 pound (approx. 500 gr.) Orecchiette
2.5 oz. (70 gr) Arugula – rucola
10 Cherry tomatoes - pomodorini
One Potato – una patata
One clove garlic – uno spicchio d’aglio
Olive oil – olio d’oliva
In a large pot, bring abundant salted water to a boil. Cut the potato in thin slices and toss it in the water. As soon as the water resumes boiling, add the arugula and then the orecchiette, stirring occasionally. In a large pan, heat some olive oil, add garlic and the sliced tomatoes. Salt and pepper to taste. Let tomatoes cook for about 5 minutes. Drain the pasta al dente and transfer to the pan. Let it sauté for 5 minutes. Finish with olive oil and freshly grated cheese. Look how yummy it looks!
Pillola d’italiano. The suffix –etto/a/i/e is added to a noun or an adjective’s ending to indicate something is small, or to express endearment. When the suffix is added, the final vowel of the word is dropped. Think about the word casa that will be casetta if the house is small and cute!
